Fit, Fast and Fresh options come from old-time work ethic

THE health of his customers has always been key for new chef on the block Fit, Fast and Fresh owner Luke Levett.

"I want to give people a healthy option," the 25-year-old business owner said.

Luke, who doesn't like cooking chips but loves making a healthy variety of salads and other meals, said a cafe like Fit, Fast and Fresh has always been a dream of his.

"Growing up we weren't rich but my pop, at 22 started his own car dealership. He was an inspiration for me," Luke said.

"I was taught only rich people could go on holidays and go overseas but my pop showed me you could get there you just have to work hard for it."

Now after six years as a chef in pubs, Italian and Scottish restaurants and catering on the weekends, Luke is happy to be doing his own thing.

"When people come to Fit, Fast and Fresh I want them to know whatever they choose will be healthy not just a healthy pick off a menu," he said.

"Since we opened two weeks ago the menu keeps changing. We plan to make it change seasonally to keep everything fresh.

"We make all our own dressings, sauces and vegetarian patties; our stuff isn't out of a can."

The range offers something for almost every diet including gluten, sugar, or dairy free options.

Resident barista and friend of Luke's, Tom Moore, prefers to work outside the kitchen and in the cafe.

"Our coconut coffee is the most popular thing at the moment, some people have told us it's the best in town," Tom said.

"We also make coffees and smoothies with rice and almond milk."

While the fresh lime and charcoal interior of the Dragon St Cafe has already changed the business dramatically Luke isn't done yet.

"I have a vision in my head, we are busy working towards it," he said.

Luke and Tom are located across from the Condamine medical centre and plan to be open seven days a week.
